Squash oil vinaigrette

Squash Seed Oil Vinaigrette

A versatile, savory dressing perfect for salads. Recommended for balsamic vinegar fans!

  • 3 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1/4 cup Stony Brook Butternut Squash Seed Oil
  • Salt and freshly ground pepper
  1. In a small bowl or measuring cup, whisk together ingredients.

  2. Season to taste with salt and pepper.

Serve over salad greens.  For a festive salad, select a spring mix or arugula greens, add dried cranberries or sliced beets, sliced fruit such as apple or pear, and seeds/nuts like Stony Brook pepitas, walnuts, or pecans, and a sprinkle of goat or feta cheese.
